Here is how the easy recipe of coconut macaroon ice-cream sandwich goes-
2 egg whites
2 cups (160g) desiccated coconut
½ cup (110g) caster (superfine) sugar
Ice creams to fill
How To Make An Ice-Cream Sandwich
Mix the egg whites, coconuts and sugar in a bowl until it is even.
Line the baking tray with non stick baking paper and using the egg ring and fill it with the mixture. For making it even you could use back of the spoon.
Do the same with the remaining mixture and keep it in a 160 * C preheated oven for about 10-12 minutes, or until they are golden brown.
Take them out of the oven, let them cool completely.
Scoop a generous amount of ice-cream of your favorite flavor on one macaroon and sandwich it with the other. Make sure that the ice-cream is hard so that it does not melt instantly.
Your coconut macaroon ice-cream sandwiches are ready to serve.
